Pancakes and Cinnamon Apples

My mom used to make this for me when I was younger, so I thought I’d give it a shot! The warm cinnamon apples are soo delicious! Easy to make too. Just toss some peeled and sliced apples into a pot with a knob of butter, brown sugar, cinnamon, nutmeg, and a bit of lemon juice. Reduce the liquid in the bottom of a pot for a nice apple/cinnamon sauce. Great on top of the pancakes! With maple syrup of course. Mmm, maple syrup~

Salmon Burgers & Beef Burgers

Kevin and I decided to make burgers this weekend! Today we made salmon burgers/sandwiches! They were super yummy. I prepped the salmon the same as I always do, the only difference this time is that I added a drizzle of honey and lemon/garlic aioli (and it was on a bun…). The lemon/garlic aioli was delicious! It would go great with any fish! It’s just some light mayo, lemon juice, minced garlic, olive oil and a pinch of salt and pepper. This picture doesn’t have it, but we also tried these sandwiches with lettuce and it was nice and refreshing. Oh, we also made roasted sweet and normal potatoes on the side. Those were good. Hehe.

Annddd yesterday we made beef burgers! Which is really just like meatloaf but in patty shape and on a bun. Medium ground beef, salt, pepper, onion, garlic, breadcrumbs, milk, Worcestershire sauce. bit of soy sauce, paprika, onion powder and garlic powder. Oh, I just realized I never added egg into this mixture… it was perfectly fine without it! Yeaahhh. c:

Salmon and Roasted Eggplant on Brown Rice

I have been roasting eggplant a lot lately! Well, I have been roasting every vegetable… roasting just makes things taste better. This is my first time using brown rice. Maybe I should try cooking it in a pot next time… not sure if my rice cooker did the job! I kinda wish it was softer… but apparently brown rice is sort of chewy. What is brown rice normally like for you? 0:

Sweet Potato Fries & Chicken Stew on Rice

Mmm, Sweet potato fries! Super easy. Peel, cut, rinse, dry, olive oil, salt, pepper, throw it in the oven to roast at 400 degrees F for 30 min on one side, then flip them over and let them cook for another 10-15 more minutes. Basically the same way was prepping carrot fries!

My stews are never photogenic… But that’s okay! I think. Just winged this one. I didn’t know what else to do with my chicken thighs. Ingredients: Chicken thighs, onion, garlic, carrots, celery, chicken stock, bay leaf, flour, tomato paste, salt, pepper, sugar, soy sauce, cornstarch and water.

Buffalo Wings

Since I was busy making quiche and curry today, I made Kevin handle the wings! He used this website for the recipe and instructions: http://foodwishes.blogspot.ca/2010/04/original-buffalo-chicken-wing-sauce.html

Overall, the texture of these were great! These didn’t need to be fried in order to get a nice crispy coating. The sauce for these wings were rather vinegar-y/acidic. Perhaps that is the typical buffalo wing flavour. I don’t usually order buffalo wings… never been fond of them. I personally like more mellow flavours, but these did pack a good punch. I ended up drizzling a couple of them with honey to cut the bite and I found them more enjoyable. This recipe was great for its cooking technique, but I think next time kevin and I will try a different sauce! I think honey and garlic sounds good. Mmm. c:

On the Fly Chicken Curry #2

Curry trial #2! I think this batch is better than the last. Below is a list of ingredients I used this time around. Any suggestions?

INGREDIENTS USED
- Chicken thighs

- Onion/Shallots
- Garlic
- Carrots
- Potatoes
- Ginger

- Curry Powder w/ sesame oil
- Garam Masala
- Cayenne Pepper
- Chinese five spice
- Tomato Paste
- Bay leaf

- Chicken stock
- Coconut milk
- Water
- Olive Oil

- Salt & pepper
- Flour

Veggie Quiche

This term most of my courses start early in the morning and I am super slow at getting ready… so I thought I’d make quiche for a quick breakfast meal! Recipe below, with step by step photos!

INGREDIENTS
2 large cloves of garlic, minced
½ medium onion (sliced)
½ red bell pepper (chopped)
6 oz bag of fresh baby spinach, to be blanched
8 large eggs (or 6 extra large eggs)
1/3 cup milk
2 cups grated cheese
(Optional: add parsley, basil, oregano)
2 pie crusts
Salt and pepper
Olive oil


DIRECTIONS

1.  Mince garlic, slice onions, chop red bell pepper


2.  Using olive oil (about 1 tablespoon or less) Cook onions and red bell peppers in a frying pan until onions are caramelized. Add salt and pepper to flavour as well as to help with the caramelizing process.

3. Bring a pot of water with a bit of salt to a boil. Add spinach. Cook until leaves are soft and obtain a bright green colour. Cooking does not take long at all. You practically submerge it and count to like… 20 and it’s done. Drain water and shock with cold water. Drain water again. Squeeze water out of the spinach. Set aside.
 
4. In a medium bowl, combine eggs and milk. Add salt and pepper to taste. Think about making an omelette!
 
5. Poke holes in the bottom of your pie crusts with a fork. Cook in the oven as directed on packaging. I never leave it in there for too long because the sides tend to brown a lot by the end of the cooking process. After this is taken out of the oven, set temperature to 350 F.

6. Time to dress your shells! Before adding your grated cheese, add additional spices if wanted (parsley, oregano, basil, garlic powder). Use about ½ cup of cheese to cover the bottom of a pie crust.
 
7. Add your cooked spinach, bell peppers, onions, and garlic.

8. Before pouring your egg mixture into the pie shell, place the pie shell on a baking sheet with parchment paper. Sometimes quiches may over flow or you might spill it when putting it in the oven! Pie shell on pan, fill with your egg mixture, top with cheese and a sprinkle of paprika.

Cook in the oven at 350 F for 25-30 minutes. Turn on broiler at the end to brown the top of the quiche. Make sure you watch it so it won’t burn!

S’mores Break

S’mores break!! Law is hurting my feelings, so I thought S’more would make it better! Take a large marshmallow and rip it in half. Place the half marshmallow, sticky side up, on a graham cracker. Stick 7 semi-sweet chocolate chips onto the marshmallow. Make sure to prepare two graham crackers as so for uno s’more! Toast it in the oven for like… I don’t know. Not very long. Just watch it! And then smoosh the two crackers together and ta daahh s’mores!

My curry never turns out the way I want it, so I am now experimenting until I get it right! This attempt wasn’t bad! But there is still something missing… I will figure it out one day! Does anybody know how to make awesome curry? Below is a list of ingredients I used this time around!

Scalloped Potatoes

Just made scalloped potatoes, and boy they are super heavy. I think next time I will throw in green onions. Maybe that will make it seem a bit lighter. Haha. Give them a try! Kind of tedious to put together though. Mostly because of potato slicing involved… but yeah. c:

SCALLOPED POTATOES

INGREDIENTS
5 potatoes, thinly sliced
½ small onion, thinly sliced
¼ cup green onions, chopped
1 cup ham, thinly sliced

2 ¼ tablespoons of olive oil OR 3 tablespoons of butter
¼ cup of flour
1 ¾ cup chicken stock
2 tablespoons of mayonnaise
½ teaspoon pepper
1/3 cup grated parmesan

Sprinkle of paprika
1/3 cup grated Parmesan

DIRECTIONS
Layer potatoes, onions, green onions, and ham into a dish.

In a medium sized pot, heat olive oil or butter and add flour to make a roux. Whisk in cold chicken stock and mayo. Continue to whisk until thickened. Take off heat, add pepper and Parmesan and mix.

Pour mixture on top of potatoes. Sprinkle cheese and paprika over the top of the potatoes.

Cook in a preheated 325 degree F oven for 2 hours.
